Yeah, I'm the same way - I think of actors and their characters as completely separate people, which is, I think, what you should do. I find that actors that I CAN'T do that with, are usually bad actors...so they don't count :-P
That being said, I can still read up on actors - know WHEN they dropped out of high school etc... without making them into godlike people whose opinions matter more than other people's. I'm able to keep up the whole "they are just dudes" thing. And I don't feel bad about oogling them either, because I woogle people who aren't actors too when they are that goodlooking :-P But I don't read up about everything, and I don't really care what their favorite breakfast cereal is...of course, I have a mind like a steel-trap when it comes to useless trivia, so just by reading interviews where people do ask silly questions, I tend to remember these things against my will.
With Misha Collins though, I sort of see him as three people, there's Misha Collins the actor, Castiel - a character he plays, and Misha Collins the comedian. It's sort of like watching Chris Rock do stand-up and watching Chris Rock act in a movie - both are entertaining, both have very little to do with who Chris Rock is as a person. Misha Collins' twitter account is sort of like his stand-up comedy forum...it's a character he puts on to entertain us.
But yeah, unlike most of the fandom out there, I don't really have any desire to go to conventions or anything...I watch the videos people take of them and read the reports, because I like information about the show, but I don't really care if I ever meet Jensen and Jared in person. Even the times I've tried to find the Supernatural filming crew in town here, it's not so that I can meet any of the actors, it's just so that I can get a little behind-the-scene glimpse of my favorite show...see how it all comes together.
