I agree that somebody who should be in charge of continuity should be hired past the second season [especially since no single script writer is hired for every episode... and I doubt any one person could do so]. A fan actually has been proven via ST: Enterprise season 4 in which ST fans were hired behind the scenes and ergo knew exactly what we should be seeing as far as "history". Effin' fans should at least get a 'consultant' role.
As to your second point... totally agree. I get that if something is very popular and you're making tons of money to pay for that expensive house, you want to keep it goin'. But you also have to have the integrity to say, "Look, this story has ended. We're done. We need to move onto other projects." And only the actors & head honcho of the production staff (Eric Kripke, I'm presuming, though I don't know how all of these contractual things work) can do this and leave. If Jensen and Jared stopped, that would be it. Misha couldn't carry the series on his own because it wouldn't be the Winchesters' tale anymore.
I get it. This is a phenomenally well paying gig. But, c'mon..., know when to say "okay, there isn't anything more to say for these characters".
