Sadly I think Kevin's Mom died because CERTAIN PEOPLE who happen to have an impenetrable bunker warded against demons, angels and anything else supernatural left their only prophet and his mother with GARTH. And Garth decided that going against some regular supernatural threat was more important than protecting said only prophet. There was a lot in this season I didn't like, but leaving Kevin hanging out there until the final episode is pretty near the top of my list.
As to Kevin's dad ever since this episode I occasionally chant "Please don't be John Winchester, Please don't be John Winchester" because being John Winchester's son never ends well and if you aren't named Sam or Dean you will be last on the list to not be sacrificed.
