You know Sam and Dean have never killed a witch, ever (that we've seen).
That's true - I guess it was Ruby who killed the witches in Mallus Malificarum? When else have we had witches? Oh - they successfully killed one in It's The Great Pumpkin, Sam Winchester, but sadly they were supposed to and then he got possessed by Samhain. :P
Did Sam and Dean not really recognize the Leviathan as a Leviathan? It bled black.
They knew it was a leviathan - I think Sam's "We should probably find that out" meant more "we should really find out how to kill these things and how they work." They know what they are called, and how they eat, and not much else. But as soon as it bled black, you could see the "oh shit" expressions on Sam and Dean's faces.
